This is a version of the first salad dressing we made. As we learned about fermentation, vegetables didn’t always turn out the way we wanted. Over fermenting is common, and change is bound to happen, so we had to figure out a way to use products we couldn’t sell in a jar. The solution – squishy cucumbers got pureed. We take that puree and turned it into a mayonnaise. In our new version, we add that to cashew cream and finish with fresh chopped dill. Now we have our take on the classic ranch dressing.

Green Goddess
Dressing

Our probiotic Green Goddess is made with capers and our own vegan worcestershire sauce to keep it vegetarian but retain that briny flavor you expect from this type of dressing. With lots of fresh organic tarragon, chives and parsley, this dressing is perfect for any salad, and pairs especially well with seafood.

Like traditional italian dressing, our version contains red wine vinegar and oregano. But we bump up the flavor, and make it probiotic, by adding in naturally fermented italian garden vegetables.

Caesar Dressing

Of all the new products in our Collective Cultures line, this is the one we are most impressed with because we’ve created a flavorful Caesar dressing without any of the traditional caesar ingredients. We’ve substituted flax and chia seeds for eggs, nutritional yeast and cashews for parmesan, and our own vegan worcestershire for anchovies. You’ve got to try it to believe it!

Cashew Ginger
Dipping & All Purpose Sauce

This sauce “finishes” dinner. Fermented ginger, onion, and garlic give this sauce its probiotics. Use it as a marinade, dipping sauce, or turn it into a salad dressing by adding a little extra virgin olive oil. Great even on cold soba noodles with fresh veggies and herbs.

Hot Sauce

The great thing about this hot sauce, which makes it different from most, is that there is no vinegar. It’s never been cooked, so it’s still raw, alive, and probiotic. This is a naturally fermented sauce, so it’s a bit effervescent.

Allium Aioli

This is like an aioli on steroids. There is a dish in France called Le Grand Aioli, where mayo is in the center and everything around is for dipping, which is our inspiration for this. Goes great with roasted potatoes, poached prawns, grilled asparagus, and artichokes. Also makes a delicious devilled egg!

Kimchi Mayonnaise

With fermented ginger, onion, and garlic, this slightly spicy mayo gives any dish an upgrade in Asian flavor. We were inspired by our traditional kimchi from our Golden State Pickle Works line, but wanted to keep it vegetarian with no fish sauce. Use it as a spread, dip, or topping…the ideas are endless!
