Chicken Wings 2 Ways

with Garlic Buffalo & Cashew Ginger Sauces

Ingredients for Chicken Wings

4 lbs chicken wings

5 teaspoons baking powder

1 Tablespoon Salt

Oil spray

Instructions

If you are organized enough, uncover the chicken wings and leave them in the fridge for a few hours to dry out. Otherwise, use a paper towel to pat the wings dry.

Adjust oven racks to upper-middle and lower-middle positions. Preheat oven to 250F (all oven types – standard/convection/fan).

Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with oil spray.

Place wings in a large bowl or in a Ziplock bag. Add the baking powder and salt, then toss to coat evenly.

Place the wings on the baking tray in a single layer with the skin side up. They should just fit snugly. They will shrink when they cook because the fat renders out so don’t worry if they look too snug.

Place wings on the lower middle oven rack and bake for 30 minutes.

Move wings up to the upper middle rack and increase the oven temperature to 425F. Bake for 40 – 50 minutes, rotating the tray halfway through.

Remove baking tray from the oven and let it stand for 5 minutes. Toss half of the wings with Garlic Buffalo Sauce and the other half with Cashew Ginger Sauce. Served with GSPW Blue Cheese Dip.

Ingredients for Garlic Buffalo Sauce

4 oz Butter

3 cloves Garlic

1/4 c Garlic Chili Paste (such as Sambal Oelek)

1/4 c GSPW Hot Sauce

1 teaspoon Worcestershire

Instructions

Slice butter and garlic and place together in small pot. Heat on stove over medium low heat until butter has melted and garlic is slightly cooked. Place mixture into blender with garlic chili paste, hot sauce and worcestershire. Blend until smooth and mixture has emulsified (this should happen as butter cools).

Ingredients for Cashew Ginger Sauce

1/3 c Collective Cultures Cashew Ginger Sauce

1 Tablespoon Honey

1 Tablespoon Sesame Oil

1 Tablespoon Nut Butter (optional for a creamier dressing)

Green Onion & Sesame Seeds, for garnish

Instructions

In small mixing bowl, whisk all ingredients together except for green onion and sesame seeds. Sesame seeds can be sprinkled on wings when tosses with sauce, and green onions can be used as garnish on top of wings after plating.
