Hoshigaki is a traditional Japanese dried persimmon, often been referred to as “the Kobe beef of the fruit world.” It is a labor and time intensive Japanese delicacy, dating back hundreds of years. We took unripe hachiya persimmons, which are insanely tannic and bitter, peeled them, tied them to twine, and hung them up to dry for a week. After the exposed fruit dried up a bit, we massaged these fruits for a few seconds each day for about six weeks. As the tannins in the fruit started breaking down, the flesh became soft and eventually leathery, turning into this dark, dried fruit with a bloomed sugar coating. This labor of love has become an annual tradition that we hope you fall in love with as well.
